Six independently owned restaurants are opening on or near Coast Highway 101 in Encinitas during 2026. The new spots include Pastaria Vivi, a chef-driven fresh pasta shop in Encinitas Village; Blank Slate, a farm-to-table event space at 101 North Coast Highway; Encinitas Brewing Company, the city's first brewery at 1588 Leucadia Boulevard; and The Brant, a coastal restaurant with rooftop bar at 806 Coast Highway 101.
