Something is happening along Coast Highway 101 in Encinitas that doesn't look like a plan. It looks like six separate bets placed by people who all decided, independently, that this is the town worth building in. And they're all landing in 2026.

The new wave started arriving in late 2025 when Rosemarie's Buns & Brews opened at 608 South Coast Highway 101. Owner Nick Balsamo built the concept around Wagyu sliders with onion confit and Kewpie mayo. He'd started with a food truck outside Harland Brewing, then opened brick-and-mortar spots in Mission Beach and Ocean Beach before choosing Encinitas. San Diego Magazine named Rosemarie's the best burger in San Diego in 2024. The Encinitas location was his pick for the permanent flagship.

Pastaria Vivi Brings Michelin-Level Pasta to Encinitas Village

Pastaria Vivi opened in March 2026 at 119 North El Camino Real in the Encinitas Village Shopping Center. Chefs Brandon Jennings and William Treff met in Michelin-starred kitchens and spent years working Italian restaurants before launching their own concept. The 1,740-square-foot space is four businesses in one: a specialty Italian retail shop stocked with imported ceramics and California-made goods, a daily handmade pasta counter, a casual sit-down spot, and a monthly pasta subscription box. They offer more than 75 rotating pasta-and-sauce combinations. Jennings and Treff tested the concept at the Cardiff Farmers Market before going permanent. They still plan to keep the market tent running.

Blank Slate: A Chef's Counter for Coast Highway 101

Aron and Pam Schwartz have quietly been one of the strongest husband-and-wife teams in San Diego food for decades. Aron is a Culinary Institute of America graduate who spent nearly 15 years at the San Diego Marriott Marquis, eight of them as executive chef. Pam is a sommelier who's worked at Nobu and cooked dinners at the James Beard House. Together they co-founded Ranch 45 in Solana Beach, a butcher and bottle shop that became a North County staple. They left that project in late 2023 and went mobile with APS Hospitality Group. By spring 2026, they'll open Blank Slate at 101 North Coast Highway 101 in the former Chiko space. It's got a 12-seat chef's counter, indoor seating for 50, and a patio that holds 75. On nights without private events, the Schwartzes plan community dinners with plates under $30.

The Brant: A Rooftop Bar Overlooking Coast Highway

The Brant is expanding from Huntington Beach to Encinitas at 806 Coast Highway 101, taking over the former Beachside Bar and Grill site. Owner Travis Brummett and his brother Drew are building a 6,500-square-foot ground-level dining room and a 1,500-square-foot rooftop bar with ocean breezes and craft cocktails. The target opening is late July or early August 2026. The menu will feature small plates, sandwiches, seafood, steak, and vegetarian options alongside brunch and happy-hour specials. It's the group's most ambitious location yet.

Encinitas Brewing Company: The City's First Brewery

Four Encinitas residents decided their city needed its own brewery. So they filed the permits that, apparently, nobody had bothered to file before. On March 8, 2026, the Encinitas Planning Commission unanimously approved Encinitas Brewing Company's proposal to operate a brewery, distillery, and restaurant at 1588 Leucadia Boulevard in the former Islands Restaurant space at Encinitas Ranch Town Center. Co-owner Brian McBride told commissioners the center is "a bit quiet, but it works great for what we're trying to do." Construction is expected to take roughly five months, with a September 2026 opening target. The space covers about 5,500 square feet inside with an expanded 1,565-square-foot patio.

More Openings Along the 101

Craft Coast Beer & Tacos, the Oceanside-born brewery and taco concept, is taking over the former Filiberto's at 476 South Coast Highway 101 with flame-grilled carne asada, al pastor, and birria tacos. The Stand, a gourmet burger chain, is opening at 267 El Camino Real during the first week of August. And Coffee Dose, the Southern California coffee brand known for its rotating specialty lattes, opened its first North County location at 160 South Rancho Santa Fe Road.

All of this arrives on top of an already strong Encinitas dining scene. Union Kitchen and Tap still packs the patio on Encinitas Boulevard. Herb & Sea continues to draw the date-night crowd. Honey's Bistro & Bakery has been a breakfast anchor on South Coast Highway 101 for years. Chick & Hawk, the fried chicken spot from skateboarder Tony Hawk and Michelin-recognized chef Andrew Bachelier, opened in late 2025 at 145 Leucadia Boulevard and is already pulling crowds for its crispy sandwiches and skate-park-inspired patio.

None of these operators were recruited by a developer. They all chose this town. That's worth paying attention to.
