Rosemarie's Buns & Brews on South Coast Highway 101 in Encinitas's Old Encinitas district is the third location of the slider concept launched in November 2025 by U.S. Army veteran and executive chef Nick Balsamo, following Mission Beach in 2023 and Ocean Beach in 2024. The menu builds around chef-driven Wagyu sliders with toppings like onion confit, Kewpie mayo, and house-made sauces -- a premium patty program that earned San Diego Magazine's Best Burger designation in 2024 and back-to-back Yelp Top 100 Restaurants in the U.S. listings, a competitive accolade concentration unmatched by other burger concepts on the South Coast Highway corridor including Eat Crispy Burger. The slider format serves two smaller burgers per order on brioche buns, encouraging multi-variety tasting across the menu's range of beef, Nashville hot chicken, and specialty builds. The Encinitas expansion is a collaboration with Matteo Cattaneo and Giovanni Bonomi of adjacent Gelati & Peccati, positioning the two concepts as a slider-and-gelato pairing on the same block. The Nashville Hot slider coats organic free-range chicken in a cayenne-forward spice blend, pan-fries to a shatteringly crisp crust, and stacks it on brioche with pickles, slaw, and a house hot-honey drizzle.
