The location marks Hillstone's first restaurant anywhere in San Diego County and occupies the former Bully's North building, a Camino Del Mar fixture that operated from 1969 until its closure in late 2017. Construction has been underway for several years, with plans originally calling for a Gulfstream seafood restaurant before pivoting to the Honor Bar concept.
