The cart-format roastery sources ethically traded beans with full traceability from farms in Mexico, Ecuador, Bolivia, and Honduras, roasting to order on-site in an industrial park shared with craft producers such as Burgeon Beer Company. Pour-over service uses a manual hand-drip method timed at approximately four minutes per cup, allowing the barista to calibrate water temperature and flow rate to each varietal's processing method—washed, honey, or natural. A second Origen cart recently opened at 2175 Salk Avenue near Scripps Medical Center, expanding the roastery's weekday footprint across two Carlsbad office campuses in the same corridor as artisanal food producers including Angel's Salumi & Truffles. The espresso bar pulls shots from rotating single-origin lots—recent offerings have included washed Pacamara from Ecuador's Finca La Josefina and natural Typica from Veracruz, Mexico—served alongside house-made pastries and breakfast paninis.
