Opened in June 2025 inside the converted former Union Bank drive-thru at the corner of Newport Avenue and Sunset Cliffs Boulevard, Spill The Beans Coffee and Bagels is the first drive-thru and fifth location in San Diego-based Verant Group's cafe portfolio that started with the 2017 Gaslamp original next to The Smoking Gun. The 900-square-foot building anchors a 50-seat patio and serves California-style bagels boiled in agave syrup using a five-ingredient recipe developed by executive pastry chef Karina Chavez-Orozco, paired with handmade cream cheeses including White Truffle & Parmesan, Bananas Foster, and Caramelized Shallot & Chive — a savory cream cheese program distinct from the kombucha-and-coffee focus at TapShack Kombucha & Coffee off Sunset Cliffs Boulevard. Coffee comes from San Diego's Dropkick Coffee, replacing the original Dark Horse Coffee that supplied earlier locations, and pours alongside cold brew, taro lattes, kombucha, matcha, chaga, and oat/almond/coconut/macadamia milk alternatives. Bagel flavors include Sundried Tomato & Cheese and Bacon & White Cheddar, paired with breakfast sandwich builds like the San Dieggo (two over-medium fried eggs, peppered bacon, American and pepper jack cheeses, and cayenne aioli on a fresh bagel). Chia Berry Bowls, avocado toast, and the B.B.L.(t) lunch sandwich (peppered bacon, tomato, lettuce, garlic aioli) extend the menu past the morning rush into early afternoon, sit-and-stay options that contrast with the table-service brunch model at Benedict's Brunch elsewhere in the neighborhood.
