The build-your-own format lets each customer select from over a dozen scratch-baked cookies or brownies for the top and bottom, choose an ice cream flavor for the center, and add toppings — a customizable dessert sequence on the same 101 block where Honey's Bistro & Bakery serves the brunch-to-dessert traffic. Cookie options rotate through chocolate chip, snickerdoodle, red velvet, funfetti, and white chocolate macadamia alongside brownie bases, with ice cream ranging from Bear Batter and Cookie Dough to Espresso Bean and a dedicated vegan oat-milk vanilla. A hot-press option warms the cookie exterior while keeping ice cream intact, creating a temperature-contrast sandwich also available in Bear Bowl format — a baked cookie base topped with scoops and toppings — on the same gelato-and-ice-cream stretch that includes Gelati & Peccati's Italian-style gelato. The chain now operates approximately 20 locations from the original Pacific Beach flagship to outposts as far as New Jersey, with all cookie and brownie recipes maintained from the founders' original 2013 formulations.
