Founded in 2013 by Carlsbad-raised siblings Clinton and Louie Prager, Prager Brothers Artisan Bread operates its Encinitas retail bakery on South Coast Highway 101 in the Old Encinitas corridor. Pastries, including buckwheat-flour gingerbread and organic kamut croissants, round out a menu grounded in heritage grains and long fermentation cycles — an artisanal bread program on the corridor that also includes Trattoria I Trulli's house-baked Italian bread service. The bakery's highest-complexity production involves multi-day cold-fermented organic sourdough starters maintained through house-milled grain blends of wheat, kamut, spelt, and sorghum flour processed on-site.
