Direct-trade beans are roasted at the Encinitas production facility and shipped to the Little Italy kitchen, where bakers hand-roll croissants, bake muffins, and press organic juice from local produce — an in-house production model that runs on the same scratch-baking discipline as Shoreside Bakery in the same neighborhood. The breakfast menu builds organic artisan toast with house-made hummus and watermelon radish, roasted-turkey sandwiches on artisan multigrain with mustard aioli, and seasonal specials like a matcha rose petal donut for the gluten-free track. Signature drinks — Turkish Latte, Salted Caramel Latte, and a Matcha Mint & Milk — use house-made almond and oat milks, a from-scratch dairy-alternative program distinct from the single-origin espresso focus at Modern Times Coffee nearby in the downtown corridor.
