Craft & Commerce in downtown San Diego's Little Italy launched in 2010 as one of Consortium Holdings' original concepts, helping pioneer San Diego's modern craft cocktail movement from the corner of Kettner Boulevard and Beech Street. The interior — redesigned by Paul Basile in partnership with the San Diego Natural History Museum — features taxidermy installations including a full-scale lion tableau above the bar, setting a maximalist tone distinct from the minimalist pours at Consortium stablemate Neighborhood in the East Village. A seasonally rotating menu anchors the gastropub kitchen around dishes like roasted bone marrow, Brussels sprouts, and a double-patty cheeseburger built on house-ground beef. The wrap-around patio at Kettner and Beech seats guests at built-in fire-pit tables, extending the bar's indoor-outdoor footprint along the same Little Italy stretch where Pali Wine Co. pours California pinot noir by the flight. Full-restaurant buyouts and private dining configurations accommodate multi-course cocktail-pairing dinners with custom menu development, dedicated event staff, and A/V integration for brand activations and seated corporate dinners.
