Latino-owned and permitted through the San Diego Department of Environmental Health, the setup took nearly two years of prototype builds and permit applications before receiving its mobile-vendor clearance. The simplified pour-over menu keeps the focus on single-origin bean quality rather than syrup-heavy specialty drinks, an approach that draws both marina visitors and guests staying at The Rambler Hotel along Bay Boulevard. Each batch is brewed through a hand-poured drip method using a ceramic V60 dripper, extracting at a controlled 195–205°F water temperature to preserve the origin-specific flavor profile of each roast.
