The Barille family — who also operate Café Topes on nearby Roosevelt Street — developed the concept from a cinnamon-roll side project into a full doughnut-and-coffee program, hand-dipping each piece in house-made glazes with the same small-batch confection approach found at Chuao Chocolatier in Carlsbad. The shop opened in August 2017 and quickly became a Village anchor, with lines regularly extending out the door and inventory frequently selling out before the posted closing time. Every doughnut — yeast-raised, buttermilk cake, and French cruller varieties — is made in-house, and the menu includes gluten-free baked doughnuts and vegan options available every day. The coffee bar pours Zumbar Coffee's Hummingbird blend, a combination of washed and natural beans from Ethiopia, Latin America, Brazil, and Sumatra, anchoring the morning side of State Street's artisan food corridor alongside specialty producers such as Angel's Salumi & Truffles. The signature Maple Bacon tops a yeast-raised doughnut with house-made Vermont maple glaze and thick applewood-smoked bacon, while the Boston Cream fills yeast-raised dough with house-made pastry cream and dips it in chocolate ganache.
