GONZO! opened on Carlsbad Village Drive in March 2020 as a veteran-owned, women-owned, and Asian-owned ramen restaurant operated by the Murphy family, who spent eight years stationed in Okinawa before launching the concept on Carlsbad's restaurant-dense Village corridor. The signature GONZO Black ramen builds its depth from housemade black garlic oil folded into a 12-hour tonkotsu pork-bone broth, a technique distinct from the butter-poached seafood programs at Harbor Fish Cafe down the same block. GONZO Red layers Szechuan peppercorn into a spicy miso base, GONZO Green offers a fully vegan umami broth, and the chicken karaage rice bowl rounds out a concise menu built for counter-service speed. The restaurant also hosts live rock-and-roll concerts inside the dining room, a performance-dining hybrid that draws a different after-dark crowd than the gelato-and-stroll traffic at GelatoLove Carlsbad Village farther down the Village. Noodles are prepared in-house using a high-hydration wheat-flour dough cut to a medium-thick gauge that holds its texture in the 190°F broth without breaking down during the extended slurp window.
