Founded in 2012 by restaurateur Jeff Chon in Orange County, the chain sources wagyu beef cuts, free-range chicken, and vegetarian-fed proteins alongside locally grown produce for its four signature broth bases. The Carlsbad location opened inside The Square at Bressi Ranch in 2021, joining the Palomar Airport Road dining cluster that also features Pizza Port Bressi Ranch for craft beer and wood-fired pies.
