NÓMADA opened in January 2026 at 6996 El Camino Real in Carlsbad, and within weeks it became the hardest reservation in North County. The restaurant comes from Grand Restaurant Group, the family-owned San Diego collective behind Bellamy's, Nick & G's, Cork & Knife, and the long-running DiCicco's Italian restaurants. But NÓMADA is something different from anything the group has done before.

The concept is built around Chef Partner Alex Carballo, who grew up in a Sinaloan family and spent years cooking in kitchens across San Diego, including stints at Valentina, Stone Brewing World Bistro & Gardens, and Fox Point Farms. His cooking at NÓMADA reflects that background. The menu isn't Tex-Mex. It isn't Baja fusion. It's regional Mexican food rooted in Sinaloan tradition, cooked over a wood-burning fire, and served in a space that feels like you walked through a set of wooden gates and ended up somewhere completely different from the strip mall outside.

What to Order at NÓMADA

The wood-fired grill is the center of everything. Oysters come off the coals with a light char. The birria chimichangas were one of the first dishes people started posting about, and they earned the hype. Whole fish, grilled meats, and seasonal vegetables all come off the same fire, and the smoke carries through every plate.

The agave bar is the other half of the draw. NÓMADA stocks a deep selection of mezcal and tequila, and the cocktail program builds around those spirits with fresh citrus, house-made syrups, and combinations that go beyond the standard margarita. That said, the classic margarita here is excellent. Sometimes the straightforward version is the right call.

The Space

NÓMADA took over the former home of Alejandra's Mexican Cantina in the Westbluff Plaza on El Camino Real. Grand Restaurant Group's in-house design team did a full transformation. The interior has cozy fireplaces, natural wood, and a warmth that makes it feel like a gathering place rather than a restaurant. The outdoor patio is large enough for groups, and the bar area works for drop-ins who don't have a reservation.

The restaurant is in the La Costa corridor of Carlsbad, close to the Omni La Costa Resort. That puts it in the 92009 ZIP code, which is the eastern, more suburban side of the city. If you're used to eating in Carlsbad Village on State Street, NÓMADA is a 10-minute drive east on El Camino Real. It's worth the drive.

How NÓMADA Fits Carlsbad's Dining Scene

"Carlsbad Mexican restaurants" gets 1,600 monthly Google searches, and "Carlsbad Mexican food" gets another 1,300. Those queries used to route people to Norte Mexican Food & Cocktails on State Street, Casa de Bandini at The Forum, or Fresco Cocina. All three are still good. But NÓMADA operates at a different level, and it fills a gap that Carlsbad's dining scene has had for a while: high-end Mexican cuisine with a serious bar program.

Grand Restaurant Group is a family business. COO Gianina Pickens represents the next generation, carrying forward a restaurant legacy that's more than fifty years old in San Diego. That family history shows in how NÓMADA runs. The service is polished without being stiff. The pacing is right. And the menu is clearly the work of a chef who knows exactly where his food comes from, because he grew up eating it.

Reservations, Hours, and What to Know Before You Go

Reservations fill fast, especially Thursday through Saturday. Book through the restaurant's website or OpenTable. Walk-ins can sometimes grab seats at the bar, but don't count on it during peak hours. The restaurant is currently open for dinner only, with lunch expected later in 2026.

Parking is available in the Westbluff Plaza lot, with overflow along El Camino Real. The lot can get tight on weekend evenings, so arriving a few minutes early helps.

NÓMADA is the kind of restaurant that changes how people think about a city's food scene. Campfire did it for Carlsbad Village in 2016. Jeune et Jolie did it for fine dining. And now NÓMADA is doing it for Mexican cuisine on the east side. Carlsbad keeps getting better restaurants, and people keep being surprised. They shouldn't be.
