Rubin enlisted his sister Hannah Brown and her husband Dante, who relocated from Colorado, to build what became a family-run food truck stationed at Grand Ave and Ingraham St before the team opened this brick-and-mortar in September 2025 in the former home of The Friendly. Every bagel is hand-rolled, boiled in a slightly sweetened water bath, and baked to produce a signature snap in the crust that reviewers compare to the best shops in New York. The menu features classic varieties including everything, sesame, poppy, cinnamon raisin, onion, and plain, paired with schmears like scallion cream cheese and lox cream cheese. Deli salads, including Mom's egg salad and tuna salad, are house-made, and all products are prepared under kosher supervision. The everything bagel has emerged as the runaway favorite, and the traditional lox sandwich is already a best-seller at the new storefront. Rubin applies his Jewish heritage to the recipes while keeping the operation intentionally simple and fuss-free. Craft beer fans grabbing a late-morning bagel sometimes continue down Garnet to SD TapRoom for afternoon pints and pub grub. The food truck continues to operate at 1608 Grand Ave for customers who prefer the original outdoor experience. The shop is open Monday through Friday starting at 6 a.m. and Sundays from 8 a.m., with Saturdays off.
