The pho bo uses a house beef broth base with fresh rice noodles, basil, cilantro, and bean sprouts, and the menu rotates through Thai red curry chicken, Philippine pancit, and Korean beef ribs — drawing both casino guests and overnight visitors from Ayres Lodge Alpine on Tavern Rd. The banh mi builds house aioli, pickled carrots, cucumber, cilantro, and jalapeño on a toasted roll with a choice of grilled pork, shrimp, chicken, or beef.
