The express-style kitchen spans Chinese, Vietnamese, Thai, Filipino, and Korean plates under Executive Chinese Chef Jo Lee, building out a multi-cuisine noodle program on the same Alpine dining corridor anchored by Alpine Tavern and Grill on Alpine Blvd. Viejas Casino & Resort, owned and operated by the Viejas Band of Kumeyaay Indians, opened the 133,000-square-foot gaming floor in 1991 and has since expanded into a full resort property with dining, bowling, outlet shopping, and seasonal ice skating. The pho bo uses a house beef broth base with fresh rice noodles, basil, cilantro, and bean sprouts, and the menu rotates through Thai red curry chicken, Philippine pancit, and Korean beef ribs — drawing both casino guests and overnight visitors from Ayres Lodge Alpine on Tavern Rd.
