The 4,000-square-foot dining room seats 121 guests across an interior, patio, and full-service bar connected by retractable garage doors for indoor-outdoor flow, a build-out scaled larger than most Encinitas Boulevard restaurants including Chin's Szechwan. Founded in Beverly Hills in 1985, CPK invented the Original BBQ Chicken Pizza and has since expanded into gluten-free, cauliflower-crust, and power-bowl formats across more than 120 domestic locations and nine international markets. The San Diego County Department of Environmental Health assigned this location a 99-out-of-100 health inspection score on its initial review, a near-perfect opening benchmark among newly converted restaurant spaces in the Encinitas Village Square area alongside The Cottage Encinitas. The most format-intensive platform is the cauliflower crust, a pressed vegetable base requiring a separate par-bake step before toppings and final oven assembly, giving the Encinitas location a plant-based crust alternative unavailable at most independent pizzerias in the market.
