Encinitas Donut House has produced pink-box donuts on Santa Fe Drive since approximately 1985, operating a pre-dawn baking schedule from 580 Santa Fe Drive near Encinitas Community Park. The fryer and proofer run in the early morning hours to produce old-fashioned glazed, buttermilk bars, apple fritters, French crullers, and cake donuts before sunrise—a traditional donut-shop format on the same Santa Fe corridor as PhoEver Encinitas. Ham and cheese croissants and donut holes supplement the core donut menu alongside drip coffee service. The single-location operation maintains a sell-through model that moves inventory before midday, adding a scarcity-driven morning stop to a New Encinitas strip that includes Hamburger Hut on the same block. The cake donut line uses a high-ratio buttermilk batter that produces a dense, moist crumb distinct from the yeast-risen varieties, with a chocolate-dipped buttermilk bar that forms a hardened shell crust over the interior.
