Nibble Chocolate in downtown San Diego's Little Italy has roasted, refined, tempered, and molded single-origin organic cacao bean-to-bar on India Street since 2013. The cafe processes every batch from raw bean through finished bar without outsourcing — a full-cycle production method distinct from the imported-chocolate model at Pappalecco down the block. The entire line is vegan, organic, gluten-free, and soy-free, using only cacao, organic sugar, and select inclusions with no soy lecithin or artificial additives. Founders with over eleven years of wine-industry experience apply a terroir-driven tasting approach to cacao, profiling acidity, bitterness, and aroma the way a sommelier evaluates grape varietals. Two additional Nibble locations in Pacific Beach and Old Town expand the brand's retail footprint, while this Little Italy storefront doubles as an espresso bar serving locally roasted beans alongside the chocolate — a cafe-plus-confection concept in the same artisan-dessert category as Extraordinary Desserts on Fifth Avenue. The most complex bar in rotation — Está Chingón — layers 70% dark chocolate with smoky mezcal warmth and tangy tamarind, a flavor architecture closer to pastry-chef confection than standard retail chocolate.
