Bluewater Boathouse Seafood Grill occupies Coronado Island's 1887 Boathouse on Glorietta Bay, a cupola-topped landmark built one year before Hotel Del Coronado as a construction prototype for the resort's architects and carpenters. The Newport Beach-based Bluewater Grill group (founded 1996) restored the over-water structure in 2014 and reopened it as a sustainable-seafood flagship on the bayfront strip alongside Glorietta Bay Inn, sourcing the rotating raw bar from its own San Diego-based swordfish boat, the Pilikia. Harpoon-caught broadbill swordfish from the Southern California coast anchors a menu that rotates with seasonal catch, supplemented by a permanent sushi counter added after a full floor-and-plumbing restoration completed in early 2025. Four private dining rooms across two levels accommodate events from 15 to 250 guests, making the boathouse a rehearsal-dinner and reception venue on the same Coronado Beach waterfront circuit as Coronado Beach Weddings. The kitchen runs a dual-station raw bar processing both East Coast oysters on the half shell and Pacific sashimi-grade yellowfin, layering ahi towers tableside from hand-cut tuna, avocado mousse, and crispy wontons over a soy-citrus reduction.
