Nobu Del Coronado launched in May 2025 inside Coronado Island's Hotel Del Coronado as a 3,700-square-foot beachfront Japanese-Peruvian restaurant — the 53rd global location in the empire co-founded in 1994 by Chef Nobu Matsuhisa and Robert De Niro. The dinner menu pairs signature Black Cod Miso, Yellowtail Jalapeño, and A5 Wagyu from Miyazaki Prefecture with Coronado-exclusive plates including Lobster Truffle Tempura and Tai Sweet Shiso, placing it alongside Française at the top of the island's reservation-only fine-dining tier. Seating covers 156 guests across an indoor dining room, 120 al fresco covers with Pacific Ocean views, a dedicated eight-seat omakase-style sushi bar, and a 12-seat Pagoda Bar pouring Hokusetsu sake, Japanese whiskey, and craft cocktails. The restaurant arrived as part of the Hotel del's $550 million revitalization, joining a resort dining portfolio that includes the original 1888-era cocktail lounge at Babcock & Story Bar and five other on-property concepts. The sushi program cuts imported bluefin toro, uni, and ikura alongside locally sourced yellowtail and sea bass, and the kitchen runs a dedicated robata grill station producing Beef Kushiyaki skewers and whole grilled preparations exclusive to the Coronado location.
