The 35-plus-sauce wing menu runs from Caribbean Jerk and Garlic Habanero to signature dry rubs, spiced to order on jumbo bone-in and boneless formats that compete for Birch Road dining traffic alongside BJ's Restaurant & Brewhouse in the Otay Ranch corridor. A full bar anchors the tropical-themed interior with draft beer, house margaritas, and well cocktails. The Birch Road location introduced the brand's first fast-casual service model, moving the Florida-based chain away from its traditional full-service format while retaining the same wing specs used across roughly 50 domestic locations. Eastlake's Korean BBQ corridor, headlined by Manna BBQ, sits within the same Birch Road dining cluster, and Hurricane's late-weekend kitchen extends the wing program past the dinner cutoff at most neighboring restaurants. Each jumbo bone-in wing is brined for a minimum of four hours, par-fried at 325°F, then flash-finished at 375°F to achieve a 1.5-millimeter exterior crunch over a juice-retaining interior.
