Manka Peruvian Cuisine in Carlsbad opened in June 2025 on Harding Street, bringing Executive Chef Julio Arias's traditional Peruvian repertoire to a refined covered-patio setting near the Carlsbad Farmers Market. The upscale-casual format and artisan approach to Old World recipes place Manka alongside European fine-dining concepts on the same Carlsbad corridor, including L'atelier de Paris nearby. "Manka"—Quechua for "vessel"—frames a menu built around ceviche clasico with mahi mahi in tiger's milk, lomo saltado braising tenderloin with aji amarillo, and arroz con mariscos layering shellfish over saffron rice. Owner Jorge Wong, who operates two Peruvian restaurants in Los Angeles, spent over a year transforming the former Pollos Maria space into the current dining room and heated patio. The Harding Street location draws from the walkable Carlsbad Village foot traffic that also frequents morning coffee at Vinaka Cafe on the same stretch. The Chaufa Manka—a Peruvian-Chinese fried rice blending quinoa, red peppers, snap peas, scallion, egg, sesame, wonton strips, ginger, and pickled turnips—represents the Chifa culinary tradition fusing Cantonese technique with Peruvian pantry staples.
