Lofty Coffee Co. in Carlsbad's La Costa district brings the North County roaster's scratch-made kitchen and specialty-grade espresso program to 7740 El Camino Real, near the Omni La Costa Resort. All beans are roasted at the company's Encinitas Roasting Works facility, then delivered to this El Camino Real café where the health-forward menu shares the La Costa dining cluster with Urban Plates and other build-your-own bowl concepts on El Camino Real. The kitchen produces wheat-free pastries, fresh-pressed organic juices, scratch-made oat and almond milks, and slow-steeped chai entirely in-house. Brunch plates include an organic avocado toast on artisan multigrain bread with heirloom tomato, watermelon radish, and microgreens, plus a chicken-avocado wrap in a spinach tortilla with house-made hummus and chipotle crema. The beverage program shares Carlsbad's craft-brewing corridor with Karl Strauss Brewing Company, offering single-origin Ethiopian pour-overs and Turkish lattes as the specialty-coffee counterpoint to the area's brewery scene. Each pour-over is brewed on a Hario V60 ceramic dripper at a 1:16 coffee-to-water ratio, with water temperature held between 200°F and 205°F for a three-and-a-half-minute total extraction targeting 20–22% dissolved solids.
