Guadalupe Brewery in Carlsbad operates a production-only nano-brewery and homebrew supply shop at 5674 El Camino Real, crafting Mexican-inspired ales rooted in the brewing traditions of Baja California's Valle de Guadalupe. The three-barrel brewhouse produces Belgian-style ales infused with Mexican ingredients — an approach that has placed its El Vainillo vanilla cream ale on the menus of high-end restaurants, including kitchens in the same culinary orbit as Casa de Bandini at The Forum. The adjoining Carlsbad Brew Supply retail shop stocks grains, hops, yeast, and equipment for home brewers, filling a gap between homebrew retailers in Vista and Linda Vista when it launched in late 2014. Wild Reserve, a Belgian-style golden strong ale fermented with wild yeast harvested from a Mexican winery and aged in a Petit Syrah barrel, earned second place at the California State Fair Commercial Craft Brew Competition — a showcase for the brewery's barrel-aging program that also produced the tequila-barrel-aged Campfire-caliber Russian House Añejo imperial stout with Mexican chocolate. The fermentation lineup includes two 10-barrel and one seven-barrel stainless-steel tanks feeding a production system capable of Belgian saisons, imperial stouts, sours, and experimental small-batch releases.
