Founded in 2013, the bakery developed its fermentation protocols under guidance from a U.S. Baking Team member who won gold at the 2005 Coupe du Monde de la Boulangerie in Paris. Organic wheat undergoes cold retardation for up to 48 hours before hand-shaping in a commercial Benier mixer, producing high-hydration crumb suited to the craft-sandwich culture represented by Board & Brew in Carlsbad Village. The flagship country loaf reaches a 78% hydration ratio across a 36-hour bulk ferment, yielding an open, irregular crumb with a crackling crust that holds its structure for up to seven days without preservatives.
