Opened in 2022 on Carlsbad Village Drive, Sushi Taisho is a tapas-format sushi bar launched by the same restaurant group behind six other sushi and poke concepts across North County San Diego. The menu reimagines traditional Japanese cuisine as shared small plates — sashimi tostadas, hot plates, signature rolls, and fresh salads — alongside a sake-and-cocktail program, running a small-plate format on the same Carlsbad Village Drive seafood corridor where Bluewater Grill operates its catch-driven menu. A large outdoor patio and regular live-music sets add a performance-dining element to the Village's evening scene. The kitchen draws on the group's 15-year, multi-concept sourcing network to rotate omakase platters and chef's-choice nigiri flights with daily market availability, a seasonal cadence that rivals the ingredient-driven tasting menus at Jeune et Jolie in the Village. The Taisho Combo presents a multi-protein cross-section — tuna, salmon, yellowtail, albacore, and ebi nigiri paired with the diner's choice of shrimp tempura roll or crunchy roll — designed as a single-plate survey of the full sashimi-grade lineup.
