Himalayan Sherpa Cuisine on Carlsbad Village Drive brings Nepalese, Indian, and Tibetan cooking to the heart of the Village, importing organic spices directly from Nepal for a menu spanning momos, thukpa, tandoori preparations, and Sherpa bread. Opened in 2023 by the same group behind Everest Himalayan Cuisine in neighboring Encinitas, the kitchen operates a dedicated tandoor and a spice-grinding station that produces masala blends in-house, an artisan approach distinct from the cocktail-forward Mexican menu at Norte Mexican Food & Cocktails on State Street. Approximately 98 percent of the menu is gluten-free — excluding naan, samosas, and momos — and the vegan and vegetarian selections cover full curry, biryani, and dal categories without dairy substitutions. The Himalayan chai service draws organic herbal teas from the same Nepalese farms supplying the kitchen's spice blends, a single-origin sourcing model that parallels Steady State Roasting's direct-trade coffee program in Carlsbad. The goat Himalayan Balti, a copper-vessel preparation combining goat, lamb, shrimp, and paneer in a high-heat single-pot curry, represents the most complex build on the menu and is finished with a proprietary garam masala ground from 12 whole spices.
