Green Dragon Tavern & Museum on Carlsbad's Paseo Del Norte is a veteran-owned recreation of Boston's original 1770s revolutionary headquarters near the Carlsbad Premium Outlets and the Flower Fields. The free-admission museum houses original documents signed by more than fifteen signers of the Declaration of Independence, drawing history-focused visitors from across the Paseo Del Norte entertainment district that includes Regal Carlsbad. A Le Cordon Bleu-trained executive chef runs a New England-inflected American kitchen centered on lobster roll variations, shepherd's pie, and barrel-aged old fashioneds. The 200-seat private-event ballroom provides full LCD projection, multi-room colonial staging, and a plated dinner service distinct from the intimate trattoria experience at 264 Fresco in the Village. Exhibit cases display authenticated letters from Washington, Jefferson, and Franklin alongside colonial-era currency and printing-press artifacts spanning 1754 through 1783.
